Ingredients :
eggs,
1 medium onion for 2,
green chillies 2-3,
1 tomato small size,
oil 2 tbsp,
salt,
Soya sauce,
tomato sauce,
turmeric,
coriander leaves minced for garnishing.
Method :
1. Cut the onions,chillies ,tomatoes into medium size pieces.
2. Heat oil and add the onions,garlic and chillies.fry till the onion is transparent.add the tomatoes and the turmeric.fry till oil separates from the mix.
3. Add egg bulk to the mixture and and keep beating mixture until egg pieces stop coagulating and break them into small pieces.
4. Now the twist - Add soya sauce and tomato sauce to the mixture and keep heating the mixture unless all the water content of the bhurji is absorbed or evaporated.
5. Stop heating and garnish the bhurji with minced coriander leaves.
6. Dish is ready to be served. Serve it with brown bread & butter. Toast the bread if you like.
